Christmas 2020: Pork Vindaloo recipe

Calling Pork Vindaloo a curry would be a sin. Pork Vindaloo is a sauce based dish which tastes better as it ages. The authentic taste of vindaloo comes from a unique blend of the fat in the pork, the garlic, vinegar, jaggery and kashmiri chillies. Below is the recipe for Pork vindaloo.
Ingredients required: 1 kg. pork, 8 tbsp Vindaloo Masala paste, 2 large onions (chopped fine), 1 tbsp ginger paste, 1 tsp brown sugar (or palm sugar or maple syrup), 2 inch stick of cinnamon, 6 whole cloves, 3 Tbsp. vegetable oil, Salt to taste and 1 cup water.
Procedure:
- Coat the pork with Vindaloo masala paste and let it marinate for about 24 hours.
- Once the pork is marinated well, heat the pan. Add oil and fry the onions till they turn golden brown.
- Add ginger garlic paste, cinnamon and cloves. Fry them.
- Add palm sugar and stir well.
- Add the marinated meat and mix.
- Add a cup of water and salt to taste.
- Mix well.
- Reduce the flame and cook till the pork is tender.
Pro-tip: Serve with plain boiled rice or Jeera rice.
