Christmas is so much more than buying gifts and decorating the Christmas tree. Its also about relishing scrumptious delicacies made at home. One such dish is rum cake. It doesn’t require a special occasion but it’s perfect for holidays. Rum cakes are easy to make and they taste like heaven. They do contain a fair amount of alcohol but can be swapped with other liquids to make them kid friendly. So hop on while we share our homemade recipe of rum cake.
Ingredients required:
- 1 cup chocolate chips (or chopped chocolate)
- 3 tablespoons light corn syrup
- 1/2 cup rum
- 2 1/2 cups crushed wafer cookies (or graham cracker crumbs)
- 1 cup powdered sugar
- 1 cup nuts (finely chopped)
Procedure:
- Add the chocolate chips/chopped chocolate in a large microwave-safe bowl. Microwave until its melts. Keep stirring every 45 seconds to prevent overheating.
- Once the chocolate melts, add the corn syrup and rum. Stir till its combined completely.
- Add wafer crumbs and stir well. Add 1/2 cup of powdered sugar and chopped nuts and mix.
- Cover the bowl with cling wrap and place the mixture in the refrigerator for about an hour.
- Take the mixture out of the refrigerator once it is firm enough to form shapes.
- Using a small candy scoop or a spoon, roll the candy into small balls between your palms.
- Place the remaining powdered sugar in a small bowl and roll the balls in sugar. ( The balls can be rolled in chopped nuts or cocoa powder as an alternate)
- Store the balls in the refrigerator and let them come to room temperature before serving.
Pro-tip: Rum balls taste better after being aged for at least 2-3days.
