Indulge in Delicious Dishes This Mahashivratri With Recipes From ‘Sattvik Cooking’ on Audible

As Mahashivratri approaches, it is time to revisit fasting recipes that are not only suitable for the fast but also delicious and quick to prepare! The festival of Mahashivratri holds deep significance as devotees across the world honour Lord Shiva.

Fasting during this festival symbolises discipline and self-control in pursuit of spiritual purity. Today, there is a growing trend towards embracing a healthier approach to fasting, with an increased focus on nutritious and sattvic foods.

Join us as we explore a selection of healthy,sattvik recipes sourced from Sattvik Cooking on Audible. From tikkis to chutneys and sweets, here are four dishes for you to savour with your loved ones during the festivities!

Raw Banana Tikkis

Ingredients:
150 grams of raw, boiled and grated banana
175 grams of boiled and grated beetroot
30 grams of boiled and grated half carrot
2 tbsp of freshly grated coconut
1 inch of grated ginger
½ tsp of coriander powder
1 tbsp of roasted peanut
½ tsp of cumin powder
1 tsp of ajwain seeds
2 tbsp of ground nut oil
½ tsp of salt

Method:
Boil the carrot, beetroot and pressure cook banana for two whistles and set aside and grate them
In a bowl, add oil, coconut, ginger, ajwain, cumin, coriander and peanut
Then, mix the vegetables including salt and shape them into tikkis
Shallow fry the tikkis in a pan on both sides until light brown
Enjoy with the chutney of your choice and relish it!

Coconut Carrot Chutney

Ingredients:
50 grams of coconut
1 small carrot
½ of a medium-sized green mango
2 tbsp of curd
3-4 of curry leaves
3-4 of coriander leaf sprigs
¼ tsp of mustard seeds
1 tbsp of crushed peanuts
1 tsp of oil
¼ tsp of salt

Method:
Take coconut, grated carrot, green carrot and coriander leaves in a blender.
Add curd, salt and sugar to it and blend it once.
Do not blend much as it needs to be of a thick consistency.
Take a small vessel for the vaghar (seasoning) and put oil, mustard seeds, crushed peanuts and curry leaves in it.
Heat it and put on the blended chutney.
Mix it thoroughly and serve with thalipeeth or any paranthas. Yummy!

Lal Bhoplachi Gharge (Maharashtrian Sweet)

Ingredients:
50 grams of Pumpkin – grated
30 grams of whole wheat flour
10 tbsp of jaggery
2 grams of oil
2 grams of nutmeg – grated
5 grams of saunf
2 grams of Himalayan pink salt

Method:
Mix grated pumpkin and jaggery, nutmeg and salt on a hot pan
Add semolina, wheat flour, 1 tbsp hot oil and mix well
Knead to a firm dough, use little water, and if required add more flour in case it becomes too sticky
Make small balls from the dough and roll out into a round shape
Grease the pan and roast them like chapati till they turn light brown
Drain on an absorbent paper. Serve and enjoy this special delicacy!
